Our local farmers' market opened up for business the first Saturday in February.
I think there were about 12 stalls in all.
And while a much smaller market than in the spring, there was still a wide variety of produce.
Apples
Hard cider
Leeks
Onions
Fixings for nice stew or soup

Yacon
I know nothing about Yacon. Wikipedia says is contains "Fructooligosaccharides which taste sweet, but pass the human digestive tract unmetabolised and hence have very low caloric value. Moreover, fructooligosaccharides have prebiotic effect, meaning that they are used by "friendly" bacteria that favor colon health and digestion."

The market also included a vendor selling mushrooms, another with goat cheese, and two vendors with pork and beef.

ReplyDeleteAll that fresh produce looks so good! I've never seen or heard of Yacon before. Hubby says he thinks it's a bacon flavored potato, lol.
